Holding cabinets keep hot food at a safe temperature. They do this from the end of cooking until serving. They are not designed to reheat food. Food that is placed in holding cabinets can be either in bulk (steam table pans) or plated. The holding cabinet is mainly used for banquets, buffets, or cafeterias. It is important for keeping food hot and safe. It is, however, not kind to product quality. To reduce deterioration, food should be kept in the holding cabinet for the shortest period of time possible. The product should also be kept at a minimum temperature of 140°F (60°C).

CookRite Warming and Holding Cabinet is insulated and 25 inches wide. It holds 18 pans that are 18 x 26 inches. The cabinet has one tempered glass door that can be reversed in the field. It has a heating mode with a temperature range of 85°F to 207°F. You can control it with dials and see the settings on an LED display. The interior and exterior are made of stainless steel. It has two swivel casters and two locking casters. The cabinet uses 1.9kW of power and runs on 120v/60/1-ph. It has a NEMA 5-20P plug and is cETLus and ETL-Sanitation certified. It is also ENERGY STAR rated.
